Christmas Fudge

Last night for Christmas family bonding time we made fudge!!  Family bonding consisted of me and Maddie in the kitchen and Todd in the family room watching the Jazz game, but at least he was a taster!!  This is really yummy fudge and it sure gives your arm a workout at the same time!!  Your kids will love making it and eating it!!

2 Cups Sugar
13 Large Marshmallows
2/3 Cup Evaporated Milk
6 oz. Chocolate Chips
1/2 cup butter (not margarine)
1 tsp. vanilla

In a large skillet mix together sugar, marshmallows and evaporated milk.  Dissolve and bring to a boil.  Stirring constantly for exactly 3 minutes after boiling begins.  Remove from heat and add the remainder of the ingredients.  Stir until the butter and chocolate chips have melted.  Pour into a lightly greased pan and refrigerate until cool.  Cut into squares.

Chicken Cordon Bleu

Chicken Breast (one per person)
Swiss Cheese
Sliced Ham
Cream of Chicken Soup
Sour Cream
2 Eggs
Bread Crumbs

Take chicken breasts and pound them flat. Lay one slice of Swiss cheese and one thinly sliced piece of ham on top of each chicken breast. Roll each chicken breast up and roll in beaten eggs, then roll in bread crumbs. Take each chicken breast and lay, seam side down, in an ungreased pan. Bake, covered, for 30 minutes. Uncover and continue baking for another 30 minutes. Heat one can of Cream of chicken soup and 1 1/2 cups of sour cream in a saucepan. Serve on the side or pour over baked chicken.

Sweet Pork

There are so many of these recipes out there, I am sure you have tried at least one.  I have tried a lot of them, some with Dr. Pepper, some with Root beer, but when I found this one made with my all time favorite COKE....I had to give it a try.  Didn't surprise me much that it turned out to be my favorite!!  I like these best with the fresh uncooked tortillas you can buy at Costco.

1 Cup Salsa
1Cup Brown Sugar
1 tsp. Garlic Powder
1 tsp. Cumin
1 tsp. Dry Mustard
1 (12 oz.) Can of Coke
3-4 Lbs. Boneless Pork Roast

1.  Cook the pork roast slowly in a crock pot for several hours until tender.  2.  Drain and shred the pork.  3.  In a separate bowl, mix together the other ingredients for the sauce.  4.  Pour the sauce into the crock pot, mix it into the roast and let it cook on low heat for 1 hour. 

Add some yummy mozzarella cheese on a warm tortilla!!  So Good!!

Chicken N' Gravy

In a pan on the stove, melt:
4 Tbsp. Butter
Add
4 Tbsp. Flour
Salt and Pepper to taste

Cook together and add:
1 Cup Chicken Broth
1 Cup Milk
1 Can Cream of Chicken Soup
Bring to a low boil until thickened. (You can add some chicken Boullion to flavor more if desired)

Add:
2-3 Cups Cooked, Diced Chicken

Serve over Mashed Potatoes. Double for a larger family.

Chili

I really like chili, however I don't do chunky chili.  I'm not a fan of chunks of peppers and onions, etc.... So when I was at a birthday party and ate this I had to have the recipe.  Thanks to my friend Leanne for this recipe.  We have this by itself, on hot dogs, Navajo tacos, baked potatoes and anything else that tastes good with chili on top!  Enjoy!

1 - 1 1/2 Lb. Ground Beef
1 Onion Chopped

Brown the meat and onion together until the meat is done and the onion is tender.

Add:

2 Cans Undiluted Tomato Soup
1 16 oz. Can Kidney Beans
1 16 oz. Can Red Chili Beans
1 Tbs. Chili Powder
1/8 tsp. Cumin
1/2 tsp. Garlic Powder

Combine above ingredients and simmer for 1 hour.  It is best if made the day before and then warmed up, but can be eaten right away as well.

Turkey Pillows

I love finding something yummy to do with the left over turkey.  This can be made with chicken as well.

1 1/2 Cups Turkey (Shredded)
2 Cans Crescent Rolls
6 oz. Cream Cheese
2/3 Cup Bread Crumbs
10 Tbs. Melted Butter
1/8 Tsp. Pepper

Mix cream cheese with 4 Tbs. butter and pepper.  Open rolls, do not separate the crescent rolls, you will use 2 triangles for one pillow.  Fill with 1/4 cup filling.  Fold over and pinch the edges.  Dip in melted butter and bread crumbs.  Bake at 375 for 15-20 minutes. 

You can use turkey gravy, chicken gravy or a mixture of cream of chicken and cream of mushroom soup for a topping and it is really good!

Homemade Cream Corn

2 (20 oz) packages of  frozen corn, thawed
1 cup whipping cream
1 can sweet and condensed milk
1 tsp. salt
1/4 tsp. accent
White pepper - to taste
4 Tbsp. flour
4 Tbsp. Melted butter

Place corn kernels, whipping cream, condensed milk, salt, accent and pepper in a large pot.Bring to a slow boil beginning on medium heat stirring frequently. Simmer for 5 minutes on low heat.

Melt butter and whisk in flour until smooth. Stir into corn until blended. Corn should thicken up.

This is a family favorite and is super yummy!! \

Poppyseed Chicken

5 Chicken Breasts or Chicken Tenders
15 oz Sour Cream
1 Tbsp. Poppyseed
1 can Cream of Chicken Soup

Mix all together and pour/spread over chicken. Crush up Ritz crackers (about 1-1/2 cups) and mix with 3 Tbsp melted butter. Sprinkle over the top.

Bake at 350* for 45 minutes or until done
